Total cook time: 30 minutes
1. Boil potatoes for 10 minutes. (Bay leaf is optional.) Drain and set aside.
2. Heat oil in large skillet. Sauté onion for 2 minutes, just enough to soften.
3. Stir in tofu and zucchini and cook for 4 minutes.
4. Add potatoes and stir.
5. Stir in artichoke, tomato sauce, diced tomatoes, and basil. Season with salt and black pepper. Cook until heated.
