Total cook time: 45 minutes
1. Preheat oven to 450ºF. Place whole beets in glass pan filled with 1 inch of water. Cover with foil and place in oven. Bake for 30 or more minutes.
2. When beets are soft, remove pan from oven and cube them.
3. Add arugula, avocado, pecans, cranberries, beets, and goat cheese to serving bowls.
4. In separate bowl, combine vinegar, shallots, honey, and oil. Pour over salad.
