Total cook time: 30 minutes
1. Cook potatoes in pan of boiling water for 15 minutes until tender. Drain and leave to cool in a bowl.
2. Toss the apples in lemon juice.
3. Add apples to potatoes. Add nuts, cheese, and arugula. Mix.
4. In small bowl, whisk olive oil, vinegar, honey, and fennel seeds together. Pour it over salad.
