Total cook time: 16 hours 15 minutes
1. Soak beans in water overnight. Drain in the morning.
2. Sauté onion in a large pan with some oil until transluscent. Add green bell pepper, zucchini, celery, and garlic. Cook for a bit.
3. Throw everything in a slow cooker (except cilantro).
4. Season with all the spices and cook on low for 8 hours. Serve with sour cream, cheese, and cilantro.
