1. Cut the greens off of the beets and place them in a baking dish that has about 2 cm of water in it. Cover with foil.
2. Chop up the butternut squash into chunks and place into a separate baking dish. Slather with oil and sprinkle with salt and pepper.
3. Bake both dishes side by side at 450°F for 40 minutes or so.
Sweet potatoes and sometimes turnips also go well with this. It's just a medley of whatever you want.
